It is also possible you just received a defective SSD. I've had some systems boot to much older versions of macOS regardless of the keys used to enter Internet Recovery Mode. When you booted into Recovery Mode, did it actually boot into the Catalina installer? If it booted an earlier version of macOS, then it will not be able to recognize the OWC Aura SSD since any macOS before High Sierra doesn't have the necessary NVMe drivers. This list shows the system firmware version installed by macOS 10.13.6 so this is the minimum firmware version necessary: You should check to see if your system firmware is shown on this page here: I wasn't completely sure if macOS 10.13+ was previously installed since sometimes people end up cloning a system and bypassing a system firmware update.
